 One Pot Honey Mustard Chicken Recipe. A very easy one-pot dinner dish featuring moistened chicken in a honey and mustard sauce with roasted potatoes and chives.

This dish is made in the Ninja Foodi 9 in 1, but it can also be cooked on the stove top and then in the oven with ease. Start by frying the leeks for a few minutes until they start to caramelize, then add the chicken breast to brown and cover. Add the remaining ingredients and roast for about 20 minutes until the chicken is cooked through, the potatoes are tender and a delicious honey and mustard sauce has formed. The potatoes should be brown and baked on top and full of flavor because they are cooked in the sauce. This one pot dish means less washing up and a memorable dinner but on the table within thirty minutes.


Tips

If you don't have a Ninja, simply cook the leek and chicken in a deep ovenproof skillet on the stove and transfer to the oven at 190C for 20-25 minutes.

Add sweet corn or diced carrots for extra greens.

Serve with crusty bread to wash off all the honey and mustard sauce.

Add all the ingredients to the slow cooker and cook over low heat for 6 hours.

Use Creme Fraiche in place of double cream for a lighter sauce.

Potatoes are important for thickening sauces. If you leave it alone, thicken the sauce with cornstarch or a sieve at the end and simmer it in a skillet with double cream.

One Pot Honey Mustard Chicken

One Pot Honey Mustard Chicken. An easy one-pot dinner with moist chicken and honey and mustard sauce with scallions and baked potatoes.


INGREDIENT

  

2 Chicken Breasts

3 Thick Sliced Onions

2 Cloves of Garlic Crushed

300 ml Chicken Stock

200 ml) milk

1 bunch Fresh Thyme

2 Potatoes Cut into large chunks

1 Tbsp Whole Grain Mustard

1 tbsp Dijon mustard

2 tbsp Honey

50 ml Double cream

Salt, pepper and olive oil

INSTRUCTIONS

 

Add a tablespoon of olive oil to the Ninja base on sear setting, or an ovenproof frying pan, and fry the leeks for a few minutes until they begin to brown and caramelize. Add the garlic cloves and fry for 30 seconds more.

Add the chicken breast and brown on both sides for about a minute.

Add the potatoes, broth, milk, mustard, honey and thyme and stir to combine. Season with salt and pepper.

Turn the Ninja to roast (or place the pan in the oven at 190C) and roast for 25-30 minutes until the chicken is cooked through and the potatoes are tender and golden on top. Check after 15 minutes and add more broth or milk if it seems too dry.

Finally, stir in the double cream and check the seasoning. Serve immediately with crusty bread.
